Ingredients
- 227 g (1 cup 14 tbsp Âľ tsp) Lasagna Noodles, wide
- 80 g (½ cup) Onion, diced
- 50 g (½ cup) Green Pepper, diced
- 21 g (â…› stick OR 2 tbsp) Butter
- 232 g (1 count) Cream of Chicken Soup
- 82 g (ÂĽ cup) Milk
- 170 g (1 cup 6 tbsp 2 tsp) Brown Mushrooms, canned, drained
- 30 g (ÂĽ cup) Pimentos
- 1 g (½ tsp) Basil, dried
- 120 g (½ cup) Cottage Cheese, small curd
- 420 g (3) Chicken Breasts, cooked, chopped or shredded
- 480 g (2 counts) Cheddar Cheese, grated (Colby)
Instructions
- 1Preheat oven to 350°F.
- 2Cook lasagna noodles according to package directions. Use no more than 10 noodles total (5 per layer). Drain and set aside.
- 3In a large skillet over medium heat, melt butter. Add onion and green pepper and sauté until softened.
- 4Stir in cream of chicken soup, milk, mushrooms, pimentos, and basil; heat until well combined.
- 5Grease a baking dish. Layer half of the noodles, then spread half of the sauce over the noodles. Top with half of the cottage cheese, half of the chicken, and half of the grated cheese.
- 6Repeat: noodles, sauce, cottage cheese, chicken, and grated cheese.
- 7Bake in preheated oven for 45 minutes, or until bubbly and lightly browned.
- 8Variation: for a deeper pan, you can increase cottage cheese to 1½ lb, add up to 2 lb chopped celery, and substitute or add mozzarella cheese.
