Ingredients

  • 600 g (4¾ cups) Bread Flour
  • 200 g (13 tbsp ¼ tsp) Milk
  • 100 g (6 tbsp 2¼ tsp) Water
  • 100 g (2 large) Eggs, medium size
  • 60 g (4 tbsp 2½ tsp) Granulated Sugar
  • 40 g (¼ stick OR 3 tbsp) Butter, unsalted, soft
  • 12 g (1 tbsp 1¼ tsp) Diamond Crystal Kosher Salt
  • 7 g (2¼ tsp) Instant Yeast, instant or active dried yeast
  • 60 g (½ cup) Sesame Seeds, approximately
  • 50 g (1 count) Egg Wash, for brushing

Instructions

  1. 1Add the sugar to the warm liquid and stir, once dissolved, add the egg and whisk it in, finally add yeast and stir it in thoroughly, set it aside until the yeast shows signs of activation; if you don’t see any activation after 10 minutes, your yeast must be dead and needs replacing.
  2. 2Once activated add the yeast mixture to the stand mixer bowl.
  3. 3Add the flour, salt, and the butter to the bowl; using the dough hook attachment, mix on medium-fast speed for approximately 8 minutes or until the dough releases from the sides of the bowl.
  4. 4Lightly oil a large bowl with any cooking oil.
  5. 5Turn out the dough onto a non-floured surface, and with lightly oiled hands, form it into a ball.
  6. 6Place the dough ball into the oiled bowl, cover the bowl, and allow it to proof for 45 minutes in a warm, draft-free spot.
  7. 7Once the 45 minutes are up, turn out the now-risen dough onto a non-floured surface; with lightly oiled hands, knock it back to force out the gas.
  8. 8Form the dough into a ball once more, return it to the oiled bowl, cover, and allow it to proof for 30 minutes.
  9. 9Once the second proof is complete, turn out the dough, knock it back again, and form it into a ball shape once more.
  10. 10Divide the dough into six 100 g pieces and six 85 g pieces; roll all pieces into small dough balls.
  11. 11Place the 100 g balls in greased crumpet rings and the 85 g balls in a hamburger bun tin; coat all the dough balls lightly in oil to prevent drying out.
  12. 12Allow the dough balls to proof for 40 minutes.
  13. 13About 10 minutes before the proofing time is up, preheat your oven to 170 °C (340 °F, Gas mark 3).
  14. 14Once the proof time is up and the balls have risen, lightly coat them with the egg wash, taking care not to get any between the dough and the metal to prevent sticking.
  15. 15While the egg wash is still wet, sprinkle each bun with sesame seeds.
  16. 16Place the prepared buns in the preheated oven and bake for 25 minutes, turning the tins around in the oven when 10 minutes of baking time remain for even cooking and color.
  17. 17When the time is up, remove the buns from the oven in their rings and transfer to a wire rack for 5 minutes before removing them from the tins.
  18. 18Your hamburger buns are now done and ready for your favorite burgers. Enjoy!
