Instructions
- 1Mix starter and warm water.
- 2Add flour and salt, mix until shaggy dough forms.
- 3Let rest 30 minutes.
- 4Perform 4 sets of stretch and folds, 30 minutes apart.
- 5Bulk ferment 4-6 hours at room temperature.
- 6Pre-shape and rest 30 minutes.
- 7Final shape and proof overnight in refrigerator.
- 8Bake in Dutch oven at 450°F for 45 minutes.
